Microwave Or Baked Salmon With Yogurt Sauce!

Ingredients:

  • Salmon 1/2lbs fillets, 1″ thick cut in 4 pieces.
  • 1 tab chopped ginger or dried and ground in food processor
  • 2 cloves garlic chopped or dried
  • 1 tablespoon curry powder
  • 2 tablespoons lemon juice
  • 1/2 tablespoon paprika
  • 1/4 tablespoon salt or seafood base 1/2 tablespoon
  • 1/8 tablespoon ground cinnamon
  • 1/8 tablespoon cayenne
  • 1 tab olive oil mix into paste add spread on fish | some water if needed
Sauce:
  • 1 cup plain yogurt
  • 1 cucumber peeled seeded and chopped
  • 2 tab dried mint
  • 1 tab olive oil
  • 2 tablespoons dried chive or minced onion
  • 1/8 tablespoon salt
  • 1/2 tablespoon garlic pepper
  • mix and refrigerate
Directions:
Spread spice mixture over the salmon.  Bake in oven at 350 degrees for 25/30 minutes.  Then it is ready to serve with sauce!
If using the microwave, place salmon in a microwave safe dish.  Spread seasoning over the salmon.  Cover with plastic wrap venting in one corner.  Microwave on high for 5 minutes, let rest for a few minutes.
Very good even without sauce!

Sardine Bake

Ingredients:

·         1 skinless boneless sardines in olive oil

·         ½ cup of water chestnuts chop fine

·         ¼ cup of mayonnaise

·         ½ tsp spicy mustard

·         ¼ tsp dry mustard

·         1½ tsp lemon pepper

·         ½ tsp garlic pepper

·         4 slices hearty bread

·         1 cup of milk

·         1 egg beaten

·         1 tsp soy sauce

·         ¼ to 1/3 cup chopped sun dried tomatoes

 

Directions:

Combine 1st seven ingredients, mix well, spread on bread.  Combine the rest of ingredients, pour slowly over bread.  Bake at 325 degrees for 25 minutes.

Shrimp Creole

Ingredients:

·         ½ cup chopped onion

·         ½ cup chopped celery

·         2 clove garlic, minced – or 2 tsp dried garlic

·         3 tbsp salad oil – or olive oil

·         1 one pound can (2 cups) tomatoes or balsamic vinegar, basil & olive oil

·         One 8oz can seasoned tomato sauce

·         1½ tsp salt or beef base

·         1 tsp sugar

·         ½ to 1 tsp chili powder or 1½

·         1 tbsp Worcestershire sauce

·         Dash Tabasco sauce

·         1 tsp cornstarch

·         12oz raw cleaned shrimp or 1 pound

·         ½ cup chopped green pepper

·         6 olives chopped

·         ¼ to ½ tsp thyme

·         2 tsp parsley

·         Dash of red pepper

·         Small bay leaf

Directions:

Cook onion, celery, and garlic in hot oil until tender, but not brown.  Add tomatoes, tomato sauce, and seasonings.  Simmer uncovered for 45 minutes.

Mix cornstarch with 2 tsp water and stir into sauce.  Cook and stir until mixture thickens.

Add shrimp and green pepper.  Cover and simmer until done (about 5 minutes).  Serve in rice ring.  Serves up to six people.


Shrimp With Orzo, Feta, & Black Olives

Ingredients/Directions:

·         ¼ cup dry minced onion

·         1½ tsp dry minced garlic

·         1 tsp oregano & basil

·          ½ tsp hot pepper flakes

·         1 tsp Italian seasoning

·         1 tsp garlic pepper

·         Place in a large pot with 1 tab olive oil.  Cook on medium till soft.  Cook ½ pound orzo, drain mix.  Add 1 tab olive oil so it doesn’t stick.  Add ½ cup of white wine, cook down a little.

·         Add 2 cans of 28oz crushed tomatoes.  Cook for ten to fifteen minutes.

·         Stir in 1 pound shrimp.  Cook for three minutes, mix orzo in sauce.

·         ½ cup sliced black olives

·         ¼ cup cream

·         Spoon in 13 x 9 dish, ½ mixture crumble 4oz feta on top.  Repeat.

·         Bake at 425 degrees for ten minutes.
